Homebrew, what more do you need?
Still making changes. For now though, here's the next beer I'll be brewing:
Dark Tower Stout
(American)Imperial Stout, All Grain
Malt:
14.5 lbs Two Row
1.5 lbs Roasted Barley
1.5 lbs Chocolate Malt
1 lb Special B
1 lb Peated Malt
Hops:
1 oz Nugget, 90 minutes
1.25 oz. Willamette, 45 minutes
2 oz Mt. Hood 15 minutes
Misc:
1 tbsp Irish Moss, 30 minutes
Yeast:
WYeast 1084 (Irish Ale)
Mash in 6.5 gallons H2O at 149F for 90 minutes. Raise temp to 170F for 20 minutes. Recirculate, and collect the first runnings only. Boil 90 minutes, with hops added as noted.
10 day primary, 68F
1 month secondary, 60F
Bottle and age for 9 months to 1 year.
